Gluten free Vanilla Chocolate Cream layered dessert

A staple at Brazilian family gatherings and celebrations, Pavê is a luscious layered dessert that’s as simple as it is indulgent. Typically made with layers of cookies (often ladyfingers or Maria biscuits), custard, and chocolate ganache, this no-bake treat is chilled to perfection and served cold. Light yet rich, it’s a crowd-pleaser that feels both nostalgic and luxurious with every spoonful.

Ingredients

For the Vanilla Cream Layer:

  • 1 can (395g) sweetened condensed milk

  • 2 cups (500ml) whole milk

  • 2 tablespoons cornstarch

  • 2 egg yolks

  • 1 teaspoon vanilla extract

For the Chocolate Layer:

  • 1 cup (240ml) heavy cream

  • 200g semisweet or dark chocolate, chopped

  • 1 tablespoon butter

Other Layers:

  • 1 package (about 200g) Maria biscuits or ladyfingers

  • 1/2 cup (120ml) milk (for dipping cookies)

  • Optional: 1 tablespoon coffee or rum (to flavor the milk)

  • Instructions

    1. Make the Vanilla Cream:
In a saucepan, whisk together the condensed milk, 1 1/2 cups milk, egg yolks, and cornstarch (dissolved in remaining 1/2 cup milk). Cook over medium heat, stirring constantly, until thickened (about 8–10 minutes). Remove from heat and stir in vanilla. Let cool slightly.

    2. Prepare the Chocolate Ganache:
In a separate pan, heat the heavy cream until just simmering. Pour over the chopped chocolate and let sit for 2 minutes. Stir until smooth, then add butter for extra shine. Let cool slightly.

    3. Assemble the Pavê:
Dip each biscuit quickly into the milk (with coffee or rum, if using) and layer them on the bottom of a serving dish. Spread half of the vanilla cream over the cookies. Add another layer of soaked biscuits, then the chocolate ganache. Repeat layers until ingredients are used up, finishing with chocolate.

    4. Chill and Serve:
Cover with plastic wrap and refrigerate for at least 4 hours, or overnight for best flavor. Top with shaved chocolate, cocoa powder, or chopped nuts before serving.

  • Tips:

    • For a tropical twist, add a layer of sliced bananas or strawberries.

    • Try a coconut cream layer by adding shredded coconut to the vanilla custard.

    • Serve in individual cups or a large glass trifle bowl for a beautiful presentation.
