Ingredients:

  • 2 cups gluten-free all-purpose flour (with xanthan gum if needed)

  • 1 tbsp baking powder

  • 1 tsp salt

  • 1/2 tsp garlic powder (optional)

  • 1/4 tsp black pepper

  • 1 ½ cups shredded sharp cheddar cheese

  • 2 large eggs

  • 1 cup milk (dairy or unsweetened almond milk)

  • 1/4 cup olive oil or melted butter

  • 2 tbsp plain yogurt or sour cream (adds moisture)

  • Instructions:

    1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.

    2. In a large bowl, whisk together gluten-free flour, baking powder, salt, garlic powder, and black pepper.

    3. Stir in the shredded cheese, coating it well with the flour mixture.

    4. In a separate bowl, whisk eggs, milk, olive oil, and yogurt until well combined.

    5. Pour wet ingredients into dry, stirring until just combined. Don’t overmix.

    6. Pour batter into prepared loaf pan and smooth the top.

    7. Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean and the top is golden.

    8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

      Tips:

      • For extra flavor, add chopped chives, jalapeños, or a mix of cheeses like mozzarella and parmesan.

      • Reheats well and freezes beautifully—just slice before freezing for easy use.
