Gluten free Classic Cherry Delight

A timeless no-bake dessert with creamy layers and a bright cherry topping, this Cherry Delight is the kind of treat that brings back sweet memories of potlucks, family dinners, and grandma’s kitchen. It’s easy, elegant, and downright irresistible!

Ingredients:

Crust:

  • 1½ cups graham cracker crumbs

  • ¼ cup granulated sugar

  • ½ cup (1 stick) unsalted butter, melted

Filling:

  • 8 oz cream cheese, softened

  • 1 cup powdered sugar

  • 1 tsp vanilla extract

  • 1 container (8 oz) Cool Whip or whipped topping

  • Topping:

    • 1 can (21 oz) cherry pie filling

    • Instructions:

      1. Prepare the crust:
        In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of a 9×9-inch dish. Chill in the refrigerator while preparing the filling.

      2. Make the filling:
        Beat the softened cream cheese with powdered sugar and vanilla until smooth and creamy. Gently fold in the whipped topping until well combined.

      3. Assemble the dessert:
        Spread the cream cheese mixture evenly over the chilled crust. Smooth the top with a spatula.

      4. Add the cherries:
        Spoon the cherry pie filling over the top of the creamy layer, spreading it out gently to cover completely.

      5. Chill and serve:
        Refrigerate the dessert for at least 4 hours (or overnight) to set. Slice into squares and serve chilled.

      6. Tips:

        • For a firmer crust, bake it at 350°F for 8 minutes and cool completely before adding the filling.

        • Swap cherry for blueberry, strawberry, or peach pie filling for fun variations.

        • Add a sprinkle of crushed nuts or mini chocolate chips on top for a twist.
