🧁 Instructions
1. Bake the Cake
-
Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans or one 9×13 pan.
-
In a large bowl, sift together flour, cocoa powder, baking soda, baking powder, and salt.
-
In another bowl, whisk eggs, sugars, yogurt, buttermilk, oil, and vanilla until smooth.
-
Gradually mix the wet ingredients into the dry.
-
Stir in the hot water/coffee last — the batter will be thin.
-
Pour into pans and bake for 28–32 minutes, or until a toothpick comes out clean.
-
Cool in the pan for 10 mins, then transfer to wire rack to cool completely.
2. Make the Strawberry Cream
-
Whip cold heavy cream with powdered sugar and vanilla until soft peaks form.
-
Fold in chopped strawberries and strawberry jam/puree (if using).
-
Chill until ready to use.
3. Assemble
-
If making a layer cake, level the cakes and spread a generous amount of strawberry cream between layers.
-
Frost the top with remaining cream.
-
Decorate with fresh strawberries and chocolate shavings.
✅ Tips
-
For extra decadence, brush the cake layers with a little strawberry syrup before frosting.
-
Make ahead: Cake layers can be baked a day early and wrapped tightly once cooled.
