🫐 Blueberry Biscuits Recipe

Ingredients:

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 3 tbsp granulated sugar

  • ½ cup (1 stick) unsalted butter, cold and cubed

  • ¾ cup buttermilk (plus extra if needed)

  • 1 cup fresh or frozen blueberries (if frozen, don’t thaw)

  • Optional: 1 tbsp coarse sugar for topping


Instructions:

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.

  3. Cut in the butter: Add the cold cubed butter and cut it into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs.

  4. Add buttermilk: Pour in the buttermilk and gently mix until just combined. If the dough feels too dry, add 1–2 tablespoons more buttermilk.

  5. Fold in blueberries: Gently fold in the blueberries, being careful not to overmix.

  6. Shape the dough: Turn the dough onto a floured surface and pat it into a 1-inch thick rectangle. Fold it over itself a few times to create layers, then gently pat it down again. Cut out biscuits using a round cutter or a glass.

  7. Bake: Place the biscuits on the prepared sheet, close together for soft sides or spaced apart for crisp edges. Sprinkle with coarse sugar if desired.

  8. Bake for 18–20 minutes, or until golden brown.

  9. Cool slightly and enjoy: Serve warm with butter, honey, or a drizzle of icing for extra indulgence.


🍯 Optional Sweet Glaze:

Mix ½ cup powdered sugar with 1–2 tbsp milk or lemon juice and drizzle over the biscuits once they’ve cooled slightly.
