1/3 cup light brown sugar
-
1 teaspoon ground cinnamon
-
2/3 cup white sugar
-
1/2 cup unsalted butter, softened
-
2 large eggs
-
1 1/2 teaspoons vanilla extract
-
1 1/2 cups all-purpose flour
-
1 3/4 teaspoons baking powder
-
1/2 cup milk
For the Apple Mixture:
-
2 small apples, peeled and chopped (use Granny Smith or Honeycrisp)
-
2 tablespoons white sugar
-
1 teaspoon ground cinnamon
For the Glaze:
-
1/2 cup powdered sugar
-
1–2 tablespoons milk or cream
-
1/4 teaspoon vanilla extract (optional)
-
Instructions:
-
Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
-
In a small bowl, mix brown sugar and cinnamon (for the swirl) and set aside.
-
In another bowl, toss chopped apples with white sugar and cinnamon. Set aside.
-
In a large bowl, cream together butter and white sugar until light and fluffy. Beat in eggs one at a time, then stir in the vanilla.
-
In a separate bowl, combine flour and baking powder. Gradually add to the butter mixture, alternating with milk, starting and ending with flour. Mix until just combined.
-
Pour half the batter into the prepared loaf pan. Top with half of the apple mixture, then sprinkle with half the brown sugar-cinnamon mix.
-
Repeat with the remaining batter, apples, and brown sugar mix. Lightly swirl the top layer with a knife.
-
Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack.
-
Once cool, whisk together glaze ingredients and drizzle over the top of the bread.
