PINEAPPLE QUICK BREAD

Pineapple Quick Bread is a soft, moist, and flavorful treat that brings a taste of the tropics to your kitchen. With its sweet pineapple flavor and tender crumb, this bread is perfect for breakfast, a snack, or even dessert. The juicy pineapple keeps the bread incredibly moist, while a hint of vanilla and cinnamon adds warmth and depth. Whether enjoyed fresh out of the oven or toasted with a pat of butter, this recipe is a must-try for pineapple lovers!

Ingredients:

  • 2 cups all-purpose flour

  • 1 cup granulated sugar

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • ½ teaspoon cinnamon (optional)

  • 2 large eggs

  • ½ cup unsalted butter, melted

  • 1 teaspoon vanilla extract

  • 1 can (20 oz) crushed pineapple, undrained

  • ½ cup chopped pecans or walnuts (optional)

  • Instructions:

    1. Preheat Oven & Prepare Pan

      • Preheat your oven to 350°F (175°C).

      • Grease and flour a 9×5-inch loaf pan or line it with parchment paper.

    2. Mix Dry Ingredients

      • In a large bowl, whisk together the flour, sugar, baking soda, salt, and cinnamon.

    3. Combine Wet Ingredients

      • In another bowl, beat the eggs. Stir in the melted butter, vanilla extract, and crushed pineapple (including the juice).

    4. Mix the Batter

      • Gradually add the wet mixture to the dry ingredients, stirring until just combined. Avoid overmixing.

      • Fold in the chopped nuts if using.

    5. Bake the Bread

      • Pour the batter into the prepared loaf pan and smooth the top.

      • Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.

    6. Cool & Serve

      • Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

      • Slice and enjoy as is, or toast with butter for extra flavor!

      • Tips:

        • For extra sweetness, drizzle with a simple glaze made of powdered sugar and pineapple juice.

        • Store in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.

        • This bread freezes well! Wrap tightly and freeze for up to 3 months.
