Bubble and Squeak

Bubble and Squeak is a traditional British dish that transforms leftover vegetables—usually from a Sunday roast—into a crispy, golden delight.

Ingredients

  • 2 cups leftover mashed potatoes (or boiled potatoes, mashed roughly)
  • 1 ½ cups cooked cabbage (or Brussels sprouts, kale, or other greens), chopped
  • 1 small onion, finely chopped
  • 1 tbsp butter or vegetable oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: ½ tsp mustard, grated cheese, or chopped cooked bacon for extra flavor
  • Instructions

    1. Prepare the mixture

      • In a bowl, combine the mashed potatoes, chopped cabbage, and onion.
      • Season with salt and pepper, and mix well. If using mustard, cheese, or bacon, add them now.
    2. Form the patties (optional)

      • You can shape the mixture into small patties for easier flipping, or cook it as one large round in the pan.
    3. Cook the Bubble and Squeak

      • Heat the butter or oil in a large frying pan over medium heat.
      • Add the mixture (either in patties or as one large portion) and press it down slightly.
      • Cook for about 5 minutes until the bottom is golden brown.
    4. Flip and crisp up

      • If cooking a large portion, carefully turn it over in sections using a spatula.
      • Cook for another 5 minutes, pressing down to crisp up the edges.
    5. Serve and enjoy

      • Serve hot, on its own or with a fried egg, sausages, or baked beans for a full meal.
      • Tips & Variations

        • Add more crunch: Fry with an extra drizzle of oil for an even crispier texture.
        • Make it meaty: Stir in leftover roast beef, ham, or corned beef for a heartier dish.
        • Spice it up: A pinch of paprika or a splash of Worcestershire sauce can add depth.
