Salsa verde, or “green sauce,” is a tangy, slightly spicy Mexican condiment made primarily with tomatillos. Unlike red salsa, which uses ripe tomatoes, salsa verde gets its vibrant color and tart flavor from tomatillos, a small green fruit encased in a papery husk.
Ingredients
- 1 pound fresh tomatillos, husked and rinsed
- 1/2 cup chopped white onion
- 1 to 2 jalapeño peppers (adjust to taste), stemmed and seeded if desired
- 2 cloves garlic, peeled
- 1/2 cup fresh cilantro leaves
- 1 teaspoon salt (adjust to taste)
- 1 tablespoon fresh lime juice
- 1/4 cup water (optional, for thinning)
Instructions
- Prepare the Tomatillos: In a medium saucepan, bring water to a boil and cook the tomatillos for 5 minutes until they turn a dull green color. Alternatively, roast them in the oven at 400°F for about 15 minutes or until slightly charred.
- Blend the Ingredients: Add the cooked tomatillos, onion, jalapeños, garlic, and cilantro to a blender or food processor. Blend until smooth. If the mixture is too thick, add a little water to reach your desired consistency.
- Season and Adjust: Stir in the salt and lime juice, adjusting to taste.
- Serve or Store: Serve immediately or chill for an hour to let the flavors meld. Store in an airtight container in the refrigerator for up to a week.
Tips and Variations
- For a smoky flavor, roast the tomatillos, jalapeños, and garlic on a dry skillet before blending.
- Want it spicier? Add an extra jalapeño or use a serrano pepper.
- For a creamier texture, mix in a ripe avocado before serving.
