Gluten-Free Bread

This homemade gluten-free bread recipe is soft, fluffy, and perfect for sandwiches or toast. Plus, it’s simple to make with wholesome ingredients!

Ingredients:

  • 2 ½ cups gluten-free all-purpose flour (with xanthan gum included)
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 ¼ cups warm water (110°F)
  • 2 tbsp olive oil
  • 1 tbsp honey or sugar
  • 1 tsp apple cider vinegar
  • 1 tsp salt
  • 2 large eggs (room temperature)

Instructions:

  1. Prepare the Yeast: In a small bowl, combine the warm water, yeast, and honey (or sugar). Let sit for about 5 minutes until frothy.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the gluten-free flour and salt.
  3. Combine Wet Ingredients: In another bowl, mix the eggs, olive oil, and apple cider vinegar.
  4. Make the Dough: Pour the yeast mixture and wet ingredients into the dry ingredients. Mix thoroughly with a hand mixer or stand mixer until the dough is smooth. The texture will be more like thick batter rather than traditional dough.
  5. Let it Rise: Transfer the dough into a greased loaf pan. Cover with a clean towel and let it rise in a warm place for 45-60 minutes until it doubles in size.
  6. Bake: Preheat the oven to 375°F (190°C). Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  7. Cool & Serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
