Ingredients:
- 2 ½ cups gluten-free all-purpose flour (with xanthan gum included)
- 1 packet (2 ¼ tsp) active dry yeast
- 1 ¼ cups warm water (110°F)
- 2 tbsp olive oil
- 1 tbsp honey or sugar
- 1 tsp apple cider vinegar
- 1 tsp salt
- 2 large eggs (room temperature)
Instructions:
- Prepare the Yeast: In a small bowl, combine the warm water, yeast, and honey (or sugar). Let sit for about 5 minutes until frothy.
- Mix Dry Ingredients: In a large mixing bowl, whisk together the gluten-free flour and salt.
- Combine Wet Ingredients: In another bowl, mix the eggs, olive oil, and apple cider vinegar.
- Make the Dough: Pour the yeast mixture and wet ingredients into the dry ingredients. Mix thoroughly with a hand mixer or stand mixer until the dough is smooth. The texture will be more like thick batter rather than traditional dough.
- Let it Rise: Transfer the dough into a greased loaf pan. Cover with a clean towel and let it rise in a warm place for 45-60 minutes until it doubles in size.
- Bake: Preheat the oven to 375°F (190°C). Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
