Ingredients

- 2 Roma tomatoes
- ½ small onion
- 2 garlic cloves
- 1 teaspoon cumin
- 1 teaspoon oregano
- ½ teaspoon salt (adjust to taste)
- 1 cup chicken broth (or water)
- 1 tablespoon vegetable oil
For the Enchiladas:
- 12 corn tortillas
- 2 cups cooked shredded chicken (or cheese, beef, or veggies)
- 1 cup crumbled queso fresco (or shredded cheese of choice)
- ½ cup diced onions (optional)
- 1 cup Mexican crema or sour cream
- Fresh cilantro for garnish
- Vegetable oil for frying
Instructions

- Toast the dried chilies in a dry pan for about 30 seconds per side until fragrant.
