How to Make Carne Asada Gorditas

Ingredients:

For the Gorditas:
  • 2 cups masa harina
  • 1 ¼ cups warm water
  • ½ teaspoon salt
  • 1 tablespoon vegetable oil
For the Carne Asada:
  • 1 lb skirt or flank steak
  • 2 tablespoons lime juice
  • 2 tablespoons orange juice
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
Toppings:
  • Salsa (your choice)
  • Guacamole or sliced avocado
  • Queso fresco or shredded cheese
  • Mexican crema or sour cream
  • Shredded lettuce or cabbage
  • Chopped cilantro and onions

Instructions:

1. Prepare the Carne Asada

  1. In a bowl, mix lime juice, orange juice, soy sauce, olive oil, garlic, cumin, chili powder, salt, and black pepper.
  2. Marinate the steak in the mixture for at least 30 minutes (or up to 4 hours for deeper flavor).
  3. Grill or pan-sear the steak over medium-high heat for about 3-5 minutes per side until nicely charred and cooked to your liking.
  4. Let the steak rest for a few minutes, then chop into small bite-sized pieces.

2. Make the Gorditas

  1. In a bowl, mix masa harina, salt, and warm water until a dough forms.
  2. Knead for a couple of minutes until smooth. Let it rest for 5 minutes.
  3. Divide into small balls (about the size of a golf ball) and flatten them into thick discs (about ¼ to ½ inch thick).
  4. Heat a skillet or comal over medium heat and cook each gordita for about 2-3 minutes per side until golden and slightly puffy.
  5. Once cool enough to handle, slice open one side of each gordita to create a pocket.

3. Assemble the Gorditas
