- 4 large eggs, at room temperature
- ¾ cup (150g) granulated sugar
- 1 cup (120g) cake flour (or all-purpose flour sifted with 2 tbsp cornstarch)
- ½ tsp baking powder
- ¼ tsp salt
- 2 tbsp milk, at room temperature
- 2 tbsp vegetable oil (or melted butter)
- 1 tsp vanilla extract

Instructions
- Prepare the oven & pan
- Preheat your oven to 325°F (160°C).
- Line the bottom of an 8-inch (20cm) round cake pan with parchment paper. Do not grease the sides (this helps the cake rise properly).
- Whip the eggs & sugar
- In a large mixing bowl, beat the eggs with an electric mixer on high speed for 2–3 minutes until pale and frothy.
- Gradually add the sugar while beating, and continue whisking for about 5–7 minutes until the mixture triples in volume and forms ribbons when lifted.
- Sift and fold in dry ingredients
- In a separate bowl, sift together the flour, baking powder, and salt.
- Gently fold the dry ingredients into the egg mixture in three additions using a spatula, making sure not to deflate the batter.
- Incorporate liquids
- Mix the milk, oil, and vanilla extract in a small bowl.
- Take a small portion of the batter and mix it with the liquid ingredients to lighten the mixture.
- Then gently fold it back into the main batter until well combined.
- Bake
- Pour the batter into the prepared cake pan and tap it lightly to remove air bubbles.
- Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool & serve
- Let the cake cool in the pan for about 5 minutes, then run a knife around the edges and turn it onto a wire rack.
- Allow it to cool completely before slicing or decorating.
