Soft and Fluffy Sponge Cake

Ingredients

  • 4 large eggs, at room temperature
  • ¾ cup (150g) granulated sugar
  • 1 cup (120g) cake flour (or all-purpose flour sifted with 2 tbsp cornstarch)
  • ½ tsp baking powder
  • ¼ tsp salt
  • 2 tbsp milk, at room temperature
  • 2 tbsp vegetable oil (or melted butter)

  • Instructions

    1. Prepare the oven & pan
      • Preheat your oven to 325°F (160°C).
      • Line the bottom of an 8-inch (20cm) round cake pan with parchment paper. Do not grease the sides (this helps the cake rise properly).
    2. Whip the eggs & sugar
      • In a large mixing bowl, beat the eggs with an electric mixer on high speed for 2–3 minutes until pale and frothy.
      • Gradually add the sugar while beating, and continue whisking for about 5–7 minutes until the mixture triples in volume and forms ribbons when lifted.
    3. Sift and fold in dry ingredients
      • In a separate bowl, sift together the flour, baking powder, and salt.
      • Gently fold the dry ingredients into the egg mixture in three additions using a spatula, making sure not to deflate the batter.
    4. Incorporate liquids
      • Mix the milk, oil, and vanilla extract in a small bowl.
      • Take a small portion of the batter and mix it with the liquid ingredients to lighten the mixture.
      • Then gently fold it back into the main batter until well combined.
    5. Bake
      • Pour the batter into the prepared cake pan and tap it lightly to remove air bubbles.
      • Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
    6. Cool & serve
      • Let the cake cool in the pan for about 5 minutes, then run a knife around the edges and turn it onto a wire rack.
      • Allow it to cool completely before slicing or decorating.
