Spinach stuffed pastry is a delicious and versatile dish that brings together the richness of flaky pastry with the savory goodness of spinach filling.   • Spinach: Fresh or frozen spinach works well, though fresh spinach will give a more vibrant flavor.
  • Cheese: Feta cheese is traditional in many recipes, but you can also use ricotta, mozzarella, or a mix of your favorite cheeses.
  • Onions and Garlic: These aromatics add depth to the filling.

Preparation

  1. Preparing the Spinach Filling: If using fresh spinach, wash thoroughly and blanch in boiling water for a few minutes until wilted. Drain and squeeze out excess water, then chop finely. If using frozen spinach, thaw and drain well.
  2. Cooking the Filling: In a skillet, sauté finely chopped onions and garlic in olive oil until translucent. Add the spinach and cook for a few more minutes to blend the flavors. Remove from heat and let it cool.
  3. Mixing the Filling: In a large bowl, combine the cooked spinach mixture with crumbled feta cheese (or your chosen cheese), beaten eggs, and your herbs and spices. Mix well until all ingredients are evenly distributed.
  4. Preparing the Pastry: Roll out the puff pastry on a floured surface to the desired thickness. Cut into squares or circles, depending on the shape you prefer for your pastries.
  5. Assembling the Pastries: Place a spoonful of spinach filling in the center of each pastry piece. Fold the pastry over the filling to form a triangle, square, or half-moon shape. Press the edges with a fork to seal and prevent the filling from spilling out during baking.
  6. Baking: Preheat your oven to 375°F (190°C). Place the assembled pastries on a baking sheet lined with parchment paper. Brush the tops with beaten egg to give them a golden, glossy finish. Bake for 20-25 minutes or until the pastries are puffed and golden brown.
