Baked Salmon in Foil with Asparagus and Lemon Garlic Butter Sauce

Baked salmon in foil with asparagus and lemon garlic butter sauce is a delicious and healthy meal! Here’s a simple recipe to make it:

Ingredients:

  • 2 salmon fillets (skin-on or skinless)
  • 1 bunch asparagus, trimmed
  • 1 lemon, thinly sliced
  • 4 tbsp unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or dill), optional for garnish

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Prepare the foil packets:
    • Lay out a large piece of aluminum foil for each salmon fillet.
    • Place a few asparagus spears in the center of each foil sheet.
  3. Make the lemon garlic butter sauce:
    • In a small bowl, combine the melted butter, minced garlic, olive oil, salt, and pepper. Stir well.
  4. Assemble the packets:
    • Place one salmon fillet on top of the asparagus.
    • Drizzle the lemon garlic butter sauce over the salmon fillet.
    • Add a couple of thin lemon slices on top of the salmon.
    • Fold the sides of the foil over the salmon and asparagus, creating a tightly sealed packet.
  5. Bake:
    • Place the foil packets on a baking sheet and bake for about 15-20 minutes, or until the salmon is cooked through (it should easily flake with a fork).
  6. Serve:
    • Carefully open the foil packets, being cautious of the steam. Garnish with fresh herbs and serve with additional lemon wedges on the side.
