Fideo Loco is a delicious and comforting Tex-Mex dish made with vermicelli noodles, ground beef, beans, and a flavorful broth. Here’s a classic recipe to try at home!

Fideo Loco Recipe

Ingredients:

  • 2 tbsp vegetable oil
  • 1 (7 oz) package fideo (vermicelli noodles)
  • 1 lb ground beef (or chorizo)
  • ½ small onion, diced
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes (or Rotel for spice)
  • 4 cups beef or chicken broth
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 tsp ground cumin
  • ½ tsp chili powder
  • ½ tsp paprika
  • Salt & pepper, to taste
  • Fresh cilantro, chopped (optional, for garnish)
  • Lime wedges (optional, for serving)

Instructions:

  1. Toast the Fideo:
    • Heat vegetable oil in a large skillet or pot over medium heat.
    • Add the fideo noodles and stir frequently until they turn golden brown (about 2-3 minutes). Remove and set aside.
  2. Cook the Meat & Aromatics:
    • In the same skillet, cook the ground beef over medium heat until browned. Drain excess grease if needed.
    • Add the diced onion and garlic, cooking until softened (about 2 minutes).
  3. Simmer the Soup:
    • Stir in the diced tomatoes, cumin, chili powder, paprika, salt, and pepper. Cook for another 2 minutes.
    • Pour in the broth, add the toasted fideo and pinto beans, and bring to a simmer.
    • Let cook uncovered for 10-12 minutes or until the noodles are soft and have absorbed some of the broth.
  4. Serve & Enjoy:
    • Garnish with fresh cilantro and serve with lime wedges.
    • Pair with warm tortillas or a side of Mexican rice.
