Carnivore No-Bake Cheesecake

Ingredients

Crust (Optional)

  • 1 cup crushed pork rinds (or finely ground crispy bacon)
  • 2 tbsp melted butter

Cheesecake Filling

  • 16 oz cream cheese (softened)
  • ½ cup butter (softened)
  • ½ cup heavy cream
  • 2 tsp vanilla extract (optional but adds flavor)
  • 1–2 egg yolks (for extra richness, optional)

Instructions

Step 1: Prepare the Crust (Optional)

  1. If using a crust, mix the crushed pork rinds (or bacon) with melted butter.
  2. Press the mixture into the bottom of a small pan or dish. Refrigerate while preparing the filling.

Step 2: Make the Cheesecake Filling

  1. In a mixing bowl, beat the softened cream cheese and butter until smooth and creamy.
  2. Add heavy cream and continue mixing until well combined.
  3. Mix in vanilla extract and egg yolks (if using).
  4. Taste and adjust if needed—some may prefer a pinch of salt for balance.

Step 3: Assemble & Chill

  1. Pour the cheesecake mixture over the crust (or directly into serving dishes if skipping the crust).
  2. Smooth the top and refrigerate for at least 2 hours or until set.
