Ingredients

- 1/3 cup breadcrumbs (or panko)
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 garlic cloves, minced
- 1/4 cup chopped parsley or cilantro
- 1/2 tsp paprika
- 1/2 tsp onion powder
- 1/2 tsp salt (adjust to taste)

- 4 oz (120g) mozzarella, cut into small cubes

- Prepare the Mixture:
In a large bowl, combine the ground chicken, breadcrumbs, Parmesan, egg, garlic, parsley, paprika, onion powder, salt, and pepper. Mix until everything is evenly incorporated. - Shape the Patties:
Divide the mixture into 8 equal portions. Flatten each portion into a small disc in your hand. Place a mozzarella cube in the center, then fold the edges around the cheese, forming a sealed patty. - Cook the Patties:
Heat olive oil in a large skillet over medium heat. Add the patties in batches, cooking for 4–5 minutes on each side or until golden brown and fully cooked (internal temperature reaches 165°F/74°C). Avoid overcrowding the pan. - Serve and Enjoy:
