Ingredients

- 2 garlic cloves, minced

- 1/2 tsp ground cumin
- 1/2 tsp chili powder (optional)
- Salt and pepper to taste
- 1 tbsp vegetable oil
For the Taquitos:
- 12 small corn tortillas
- Oil for frying (vegetable or canola)

- Shredded lettuce
- Mexican crema or sour cream
- Crumbled queso fresco

- Prepare the Picadillo Filling:
- Heat 1 tablespoon of oil in a large skillet over medium heat.
- Add the onion and garlic, sautéing until fragrant and softened.
- Add the ground beef and cook until browned, breaking it up into small pieces.
- Stir in the diced potatoes and cook for about 5 minutes.
- Add the chopped tomato (or tomato sauce), cumin, chili powder, salt, and pepper. Mix well.
- Cover and simmer for 10–15 minutes, stirring occasionally, until the potatoes are tender and the mixture is well combined. Remove from heat and let cool slightly.
- Assemble the Taquitos:
- Warm the tortillas in a dry skillet or microwave to make them pliable.
- Place a small amount of picadillo filling (about 2–3 tablespoons) along the center of each tortilla. Roll tightly and secure with a toothpick if needed.
- Fry the Taquitos:
- Heat oil in a deep skillet or frying pan over medium heat.
- Carefully place the taquitos seam-side down into the hot oil. Fry in batches until golden and crispy, about 2–3 minutes per side.
- Drain on paper towels to remove excess oil.
- Serve:
- Arrange the taquitos on a serving plate and garnish with shredded lettuce, crema, queso fresco, and your favorite salsa or guacamole.
