There’s something undeniably comforting about a dessert that combines smooth, velvety custard with the rich sweetness of caramel. This Creamy Caramel Custard Pie is the perfect indulgence for any occasion.

For the Crust:
- 1 ½ cups all-purpose flour
- 1 tbsp sugar
- ½ tsp salt
- ½ cup unsalted butter, cold and cubed
- 4–5 tbsp ice water
For the Caramel Custard Filling:
- ¾ cup granulated sugar (for caramel)
- 2 tbsp water
- 1 cup whole milk
- 1 cup heavy cream
- 4 large eggs
- ½ cup granulated sugar
- 1 tsp pure vanilla extract
- Pinch of salt

Instructions
Step 1: Prepare the Crust
- In a large mixing bowl, whisk together the flour, sugar, and salt.
- Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing gently until the dough comes together.
- Form the dough into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
Step 2: Make the Caramel
- In a medium saucepan, combine ¾ cup sugar and 2 tablespoons of water. Cook over medium heat, swirling occasionally, until the sugar dissolves and turns a deep amber color.
- Carefully add the milk and cream, whisking constantly. (The caramel may harden but will melt as it heats.)
- Heat until the caramel mixture is smooth and just warm, then set aside to cool slightly.
Step 3: Prepare the Custard
- In a large bowl, whisk together the eggs, ½ cup sugar, vanilla, and salt until smooth.
- Slowly whisk the caramel mixture into the egg mixture until fully combined.
Step 4: Assemble and Bake
- Preheat your oven to 350°F (175°C).
- Roll out the chilled pie crust on a lightly floured surface and fit it into a 9-inch pie dish. Trim and crimp the edges as desired.
- Pour the caramel custard filling into the prepared crust.
- Bake for 35–40 minutes, or until the custard is set but still slightly jiggly in the center.
Step 5: Cool and Serve
- Let the pie cool to room temperature, then refrigerate for at least 2 hours before serving.
- Optionally, garnish with whipped cream or a drizzle of caramel sauce.
