Ingredients
For the Base:
- 2 cups crispy rice cereal
- 1 cup crushed graham crackers (optional for extra crunch)
- 1/4 cup unsalted butter, melted
For the Caramel Layer:
- 1 cup granulated sugar
- 1/2 cup unsalted butter
- 1/2 cup heavy cream
- 1/4 teaspoon sea salt
For the Chocolate Layer:
- 1 1/2 cups semi-sweet or milk chocolate chips
- 1 tablespoon coconut oil or vegetable oil
Optional Toppings:
- Sea salt flakes
- Chopped nuts or toffee bits
Instructions
Step 1: Prepare the Base
- Line an 8×8-inch pan with parchment paper, leaving some overhang for easy removal.
- In a large mixing bowl, combine crispy rice cereal and crushed graham crackers (if using).
- Pour melted butter over the mixture and stir until evenly coated. Press the mixture firmly into the bottom of the prepared pan.
Step 2: Make the Caramel
- In a medium saucepan, combine sugar, butter, and heavy cream. Cook over medium heat, stirring constantly, until the sugar dissolves and the mixture starts to bubble.
- Reduce heat to low and let the mixture simmer for 5–7 minutes, stirring occasionally, until thickened. Stir in sea salt.
- Pour the caramel evenly over the cereal base. Let it cool slightly while you prepare the chocolate layer.
Step 3: Add the Chocolate Layer
- Melt chocolate chips and coconut oil in the microwave in 30-second intervals, stirring between each until smooth.
- Pour the melted chocolate over the caramel layer and spread evenly.
Step 4: Chill and Set
- Sprinkle sea salt flakes or your choice of toppings over the chocolate layer.
- Place the pan in the refrigerator for at least 2 hours, or until the layers are set.
Step 5: Slice and Serve
- Once set, use the parchment paper to lift the bars from the pan.
- Cut into squares or rectangles and enjoy!
