Broccoli Cheese Casserole

Broccoli Cheese Casserole is a comforting classic that combines tender broccoli, a rich cheese sauce, and a buttery topping. Perfect for family gatherings, potlucks, or as a side dish for a holiday feast, this casserole is a crowd-pleaser that’s easy to make and packed with flavor.

Ingredients:

  • 6 cups fresh broccoli florets (or 2 lbs frozen, thawed)
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup mayonnaise
  • 1 large egg, beaten
  • 1 ½ cups shredded sharp cheddar cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika (optional)
  • Salt and black pepper to taste
  • 1 cup crushed Ritz crackers (or breadcrumbs)
  • 3 tablespoons melted butter

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  2. Prepare the Broccoli:
    If using fresh broccoli, blanch it in boiling water for 2-3 minutes, then transfer to an ice bath to stop the cooking process. Drain thoroughly.
  3. Make the Cheese Mixture:
    In a large bowl, mix the condensed soup, mayonnaise, beaten egg, shredded cheese, garlic powder, onion powder, paprika (if using), salt, and pepper. Stir until well combined.
  4. Assemble the Casserole:
    Place the broccoli evenly in the prepared baking dish. Pour the cheese mixture over the top, ensuring the broccoli is well coated.
  5. Add the Topping:
    In a small bowl, combine the crushed crackers with melted butter. Sprinkle the mixture evenly over the casserole.
  6. Bake:
    Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown.
  7. Serve:
    Let the casserole rest for 5 minutes before serving. Enjoy it warm as a side dish or even as a main course.
