Bacon Mushroom Swiss Cheese Meatloaf

A Bacon Mushroom Swiss Cheese Meatloaf is a flavorful twist on the classic meatloaf, combining the savory goodness of bacon, earthy mushrooms, and melty Swiss cheese. Here’s a recipe to make it:

Ingredients:

  • 1 lb ground beef (or a mix of beef and pork)
  • 1/2 lb ground pork (optional, or add more beef)
  • 1/2 cup breadcrumbs (or crushed crackers)
  • 1/4 cup milk
  • 1 large egg
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup cooked bacon, chopped (about 4-5 strips)
  • 1 cup mushrooms, finely chopped
  • 1 1/2 cups Swiss cheese, shredded
  • 1/4 cup fresh parsley, chopped (optional)
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste

For the topping:

  • 1/2 cup ketchup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon brown sugar (optional for sweetness)

Instructions:

1. Preheat the Oven:

Preheat your oven to 350°F (175°C).

2. Prepare the Bacon:

Cook the bacon in a pan over medium heat until crispy. Remove from the pan and drain on paper towels. Chop the bacon into small pieces and set aside.

3. Sauté the Mushrooms and Onions:

In the same pan, sauté the chopped mushrooms and onions until softened and browned, about 5-7 minutes. Season with a pinch of salt and pepper. Remove from heat and let cool slightly.

4. Mix the Meatloaf:

In a large bowl, combine the ground beef, ground pork (if using), breadcrumbs, milk, egg, Worcestershire sauce, cooked bacon, sautéed mushrooms and onions, half of the shredded Swiss cheese, parsley (if using), and salt and pepper to taste. Mix everything together until just combined.

5. Shape the Meatloaf:

Transfer the meat mixture to a baking sheet or loaf pan. Shape it into a loaf shape.

6. Prepare the Topping:

In a small bowl, mix together the ketchup, mustard, and brown sugar (if using). Spread the mixture evenly over the top of the meatloaf.

7. Bake the Meatloaf:

Place the meatloaf in the oven and bake for about 45 minutes to 1 hour, or until the meatloaf reaches an internal temperature of 160°F (71°C).

8. Add Cheese:

About 10 minutes before the meatloaf is finished baking, sprinkle the remaining Swiss cheese over the top of the meatloaf. Return it to the oven to melt the cheese.

9. Serve:

Once the meatloaf is done, let it rest for 5-10 minutes before slicing. Serve with mashed potatoes or a side of your choice.
