Fluffy Flourless Pancakes

These flourless pancakes are a game-changer for anyone looking to enjoy a light, fluffy stack without the need for traditional flour. Perfect for gluten-free diets or simply when you want a wholesome, protein-packed breakfast.

Ingredients:

  • 2 large ripe bananas
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon (optional)
  • A pinch of salt
  • Butter or oil for cooking
  • Instructions:

    1. Prepare the batter:
Mash the bananas in a mixing bowl until smooth. Add the eggs, vanilla extract, baking powder, cinnamon, and salt. Whisk everything together until you get a smooth, pourable batter.
    2. Heat the pan:
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
    3. Cook the pancakes:
Pour about 2 tablespoons of batter onto the skillet for each pancake. Cook for 1-2 minutes, or until bubbles form on the surface and the edges look set. Flip and cook for another 1-2 minutes, until golden brown and cooked through.
    4. Serve:
Transfer to a plate and repeat with the remaining batter. Serve warm with your favorite toppings.

Tip: To boost fluffiness, let the batter sit for a few minutes before cooking. You can also add a scoop of protein powder or a tablespoon of almond flour if desired for extra texture.
