Here’s a delicious recipe for Potato Pancakes with Vegetables and Cheese—a perfect dish for breakfast, brunch, or a satisfying snack. The crispy edges, savory vegetables, and melty cheese make these pancakes irresistible!

Ingredients:

For the Pancakes:

  • 4 medium potatoes, peeled and grated
  • 1 small zucchini, grated
  • 1 medium carrot, grated
  • 1 small onion, finely chopped or grated
  • 1/2 cup shredded cheddar cheese (or cheese of your choice)
  • 2 eggs
  • 1/4 cup all-purpose flour (or more if needed)
  • 1/2 tsp baking powder (optional, for fluffiness)
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 2–3 tbsp fresh parsley or dill, chopped (optional)

For Frying:

  • 3–4 tbsp vegetable oil

Optional Toppings:

  • Sour cream or Greek yogurt
  • Chopped green onions or chives
  • Extra shredded cheese
  • Instructions:

    1. Prepare the Vegetables:
      Grate the potatoes, zucchini, and carrot. Place the grated potatoes and zucchini in a clean kitchen towel or cheesecloth, then squeeze out as much liquid as possible. This step ensures crispy pancakes.
    2. Mix the Batter:
      In a large bowl, combine the grated and squeezed potatoes, zucchini, and carrot. Add the onion, cheese, eggs, flour, baking powder (if using), garlic powder, salt, pepper, and herbs. Mix until well combined. If the mixture seems too wet, add a little more flour.
    3. Heat the Pan:
      Heat the vegetable oil in a large non-stick skillet over medium heat. Ensure the oil is hot but not smoking before adding the batter.
    4. Cook the Pancakes:
      Scoop about 2 tablespoons of the batter per pancake into the skillet. Flatten each mound slightly with the back of a spoon to form a pancake. Cook for 3–4 minutes per side, or until golden brown and crispy. Work in batches, adding more oil as needed.
    5. Drain Excess Oil:
      Transfer the cooked pancakes to a plate lined with paper towels to drain excess oil.
    6. Serve and Enjoy:
      Serve the pancakes warm with sour cream, Greek yogurt, or your favorite dipping sauce. Garnish with green onions, chives, or extra cheese if desired.
    7. Tips:
      • For extra flavor, try adding grated Parmesan cheese or a pinch of smoked paprika to the batter.
      • You can customize the veggies based on what you have—bell peppers, spinach, or corn work well too!
