Ingredients
For the Cake:
- 2 ½ cups all-purpose flour
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 4 large eggs, room temperature
- 2 tsp vanilla extract
- 1 cup sour cream
- 1 cup fresh strawberries, diced
For the Cheesecake Filling:
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
For the Glaze:
- 1 cup powdered sugar
- 1-2 tbsp milk
- ½ tsp vanilla extract
- Fresh strawberries, for garnish (optional)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a bundt pan generously with butter and flour or non-stick spray.
- Prepare the Cheesecake Filling: In a medium bowl, beat the cream cheese and sugar together until smooth. Add the egg and vanilla extract, mixing until well combined. Set aside.
- Mix the Dry Ingredients: In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- Cream Butter and Sugar: In another large mixing bowl, cream the butter and sugar together until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with sour cream, beginning and ending with the flour mixture. Mix until just combined. Gently fold in the diced strawberries.
- Assemble the Cake: Pour half of the cake batter into the prepared bundt pan. Spread the cheesecake filling evenly over the batter, being careful not to touch the edges of the pan. Add the remaining cake batter on top, spreading it evenly.
- Bake: Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10-15 minutes before inverting onto a wire rack to cool completely.
- Prepare the Glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the cooled cake.
- Serve and Garnish: Garnish with fresh strawberries, if desired. Slice, serve, and enjoy
