Cheeseburger Soup

Cheeseburger soup is the perfect way to get all the flavors of a classic cheeseburger in a cozy, creamy bowl. It’s rich, hearty, and filled with everything you love in a cheeseburger—ground beef, cheddar cheese, potatoes, and a hint of smokiness from bacon. Here’s how to make it!

Ingredients

  • 1 lb ground beef
  • 4 strips bacon, chopped (optional but adds great flavor)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 medium potatoes, diced small (Russets work well)
  • 2 cups chicken or beef broth
  • 1 1/2 cups whole milk (or half-and-half for extra creaminess)
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded carrots (adds color and sweetness)
  • 1 stalk celery, diced
  • 1/4 cup flour
  • Salt and pepper, to taste
  • Optional garnishes: Chopped pickles, diced tomatoes, shredded lettuce, extra cheese

Instructions

  1. Cook the Meat and Bacon
    • In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside.
    • In the same pot, add the ground beef, breaking it up with a spoon, and cook until browned. Drain any excess fat if needed.
  2. Sauté the Veggies
    • Add diced onion, garlic, shredded carrots, and celery to the pot with the beef. Sauté for 3-4 minutes until softened and fragrant.
  3. Add Potatoes and Broth
    • Stir in the potatoes, then sprinkle the flour over the mixture, stirring to coat everything evenly.
    • Pour in the broth, scraping up any browned bits at the bottom of the pot for extra flavor.
    • Bring the mixture to a simmer and cook for 10-15 minutes, or until the potatoes are tender.
  4. Add Milk and Cheese
    • Lower the heat to medium-low, add the milk, and stir until warmed through.
    • Gradually add the shredded cheese, stirring constantly until the cheese melts smoothly into the soup.
  5. Season and Serve
    • Add salt and pepper to taste, and stir in the cooked bacon bits.
    • Serve hot with your choice of garnishes, like a sprinkle of extra cheese, diced pickles, or chopped tomatoes.

Enjoy your cheeseburger soup with crusty bread or a side salad, and savor that comforting, cheeseburger-y goodness in each spoonful!
