Cheesy Meatloaf over Mashed Potatoes

There’s something ultra-satisfying about a classic meatloaf, but when you add gooey, melted cheese, it transforms into a comfort food masterpiece. This cheesy meatloaf recipe combines seasoned ground beef with a blend of cheeses that melts beautifully as it bakes.

For the Meatloaf:

  • 1 lb ground beef (80% lean for juiciness)
  • 1/2 cup breadcrumbs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/2 small onion, finely chopped
  • 1/4 cup milk
  • 1 large egg
  • 1 tsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Optional: ketchup or BBQ sauce for glaze

For the Mashed Potatoes:

  • 4 large russet potatoes, peeled and cubed
  • 1/4 cup unsalted butter
  • 1/2 cup heavy cream or milk (adjust to desired creaminess)
  • Salt and pepper to taste
  • Optional: chopped parsley or chives for garnish

Instructions:

1. Preheat Oven:
Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.

2. Prepare the Meatloaf Mixture:
In a large bowl, combine the ground beef, breadcrumbs, shredded cheddar, shredded mozzarella, chopped onion, milk, egg, Worcestershire sauce, garlic powder, Italian seasoning, salt, and pepper. Mix until just combined, being careful not to overwork the meat.

3. Form and Bake the Meatloaf:
Transfer the meat mixture into the prepared loaf pan, pressing it down gently to shape it evenly. If desired, spread a thin layer of ketchup or BBQ sauce over the top for added flavor and moisture. Bake for 45–50 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C). Remove from oven and let it rest for 5 minutes before slicing.

4. Make the Mashed Potatoes:
While the meatloaf is baking, add the cubed potatoes to a large pot of salted boiling water. Cook until fork-tender, about 15–20 minutes. Drain and return the potatoes to the pot. Add the butter and heavy cream, then mash until smooth and creamy. Season with salt and pepper to taste.

5. Serve:
Spoon a generous serving of mashed potatoes onto each plate. Top with a slice of cheesy meatloaf, garnishing with parsley or chives if desired. Serve hot and enjoy the rich flavors of this comforting dish!

Tip: For extra cheesiness, sprinkle a bit of additional shredded cheese on top of the meatloaf during the last 5 minutes of baking!
