Ingredients

  • For the Red Sauce:
    • 6 dried guajillo chiles, seeded and stems removed
    • 2 dried ancho chiles, seeded and stems removed
    • 2 cloves garlic
    • 1 small onion, roughly chopped
    • 1 ½ cups water
    • ½ teaspoon ground cumin
    • Salt to taste
    • 1 tablespoon vegetable oil
  • For the Enchiladas:
    • 12 corn tortillas
    • 2 cups shredded queso fresco or Oaxaca cheese
    • Vegetable oil (for frying tortillas)
    • ½ cup chopped white onion, for garnish
    • ¼ cup chopped cilantro, for garnish
    • Sour cream or Mexican crema (optional)

Instructions

  1. Prepare the Red Sauce:
    • In a saucepan, boil the guajillo and ancho chiles in water until soft (about 10 minutes). Drain and set aside.
    • In a blender, combine softened chiles, garlic, onion, cumin, and 1 ½ cups water. Blend until smooth.
    • Strain the sauce through a fine sieve to remove any chunks, then season with salt.
    • In a medium pan, heat 1 tablespoon of oil over medium heat. Pour in the sauce and simmer for about 10 minutes, stirring occasionally, until thickened. Set aside.
  2. Prepare the Tortillas:
    • Heat about ½ inch of vegetable oil in a skillet over medium heat.
    • Quickly fry each tortilla for 5-10 seconds on each side to make them pliable. Remove and drain on paper towels.
  3. Assemble the Enchiladas:
    • Preheat oven to 350°F (175°C).
    • Dip each tortilla in the red sauce, then fill with 2 tablespoons of shredded cheese. Roll up the tortilla and place it seam-side down in a baking dish.
    • Repeat with all tortillas, arranging them closely in the dish.
