Lasagna Soup

Lasagna soup is a cozy, comforting dish that captures all the flavors of classic lasagna but in a quicker and more convenient form. Instead of layering noodles, sauce, and cheese in a baking dish, everything simmers together in one pot, making this perfect for a busy weeknight.

Ingredients:

  • 1 tbsp olive oil
  • 1/2 lb ground beef
  • 1/2 lb Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) crushed tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups chicken or beef broth
  • 2 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • Fresh basil for garnish
  • Salt and pepper to taste
  • Instructions:

    1. Sauté the Meat:
In a large pot, heat olive oil over medium heat. Add ground beef and Italian sausage, cooking until browned. Break the meat into small pieces as it cooks. Drain excess fat.
    2. Cook the Vegetables:
Add diced onions and cook until softened, about 3-5 minutes. Stir in the garlic and cook for another 1 minute until fragrant.
    3. Add Tomatoes and Broth:
Stir in crushed tomatoes, tomato sauce, and broth. Season with Italian seasoning, crushed red pepper flakes (if using), salt, and pepper. Bring the mixture to a simmer.
    4. Cook the Noodles:
Add broken lasagna noodles to the pot. Cook for about 8-10 minutes or until the noodles are tender.
    5. Add Cheese:
In a small bowl, mix ricotta, mozzarella, and Parmesan cheese together. Add a spoonful of the cheese mixture on top of each serving of soup for that classic lasagna flavor.
    6. Serve:
Ladle the soup into bowls, top with fresh basil, and enjoy!
    7. This lasagna soup is sure to satisfy your lasagna cravings with minimal effort and maximum flavor. Serve with garlic bread for an extra touch.
