Lagana is a traditional Greek flatbread, typically prepared during Clean Monday, which marks the beginning of Lent in the Orthodox Christian tradition. This deliciously soft and airy bread is usually topped with sesame seeds and has a rustic, slightly crispy crust.
Ingredients:
- 1 ½ cups gluten-free flour blend (ensure it’s suitable for bread)
- ½ cup almond flour
- 1 tsp xanthan gum (omit if your gluten-free flour blend already contains it)
- 1 tsp salt
- 1 packet (2 ¼ tsp) active dry yeast
- 1 tsp sugar
- ¾ cup warm water (110°F or 45°C)
- 2 tbsp olive oil
- 1 tbsp honey (optional, for slight sweetness)
- Sesame seeds for topping
Instructions:
- Activate the Yeast:
In a small bowl, combine warm water, yeast, and sugar. Stir lightly and let it sit for 5-10 minutes until it becomes frothy. - Prepare the Dough:
In a large mixing bowl, whisk together the gluten-free flour blend, almond flour, xanthan gum (if using), and salt. Create a well in the center of the dry ingredients and pour in the yeast mixture, olive oil, and honey. - Mix the Dough:
Mix the ingredients together using a spatula or a stand mixer with a dough hook attachment. Continue mixing until a soft, sticky dough forms. If the dough seems too dry, add a little more warm water, 1 tablespoon at a time. - First Rise:
Cover the bowl with a damp cloth and place it in a warm spot. Allow the dough to rise for about 1-1.5 hours, or until it has doubled in size. - Shape the Bread:
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Punch down the dough gently and transfer it onto the prepared baking sheet. Shape it into an oval or rectangular flatbread, about ½ inch thick. Drizzle the surface with a little olive oil and sprinkle sesame seeds generously over the top. - Second Rise:
Let the shaped dough rise for an additional 15-20 minutes while the oven preheats. - Bake the Lagana:
Bake the bread in the preheated oven for 18-22 minutes, or until the top is golden brown and the bread feels firm to the touch. - Cool and Serve:
Let the bread cool on a wire rack before slicing. Serve warm with olive oil, dips, or alongside your favorite meal.
Enjoy your gluten-free Lagana with a touch of Mediterranean flair!
