  • 1 cup breadcrumbs

  • 1/4 cup pine nuts (optional)
  • 1/4 cup chopped tentacles (optional)
  • 1/4 cup lemon juice

  • 1/2 cup marinara sauce (optional)

Instructions:

  1. Prepare the Stuffing:
    • In a bowl, combine breadcrumbs, Parmesan, garlic, parsley, pine nuts (if using), and chopped calamari tentacles (if using).
    • Add olive oil and lemon juice, mixing until it becomes a cohesive mixture. Season with salt and pepper to taste.
  2. Stuff the Calamari:
    • Gently stuff each calamari tube with the breadcrumb mixture, filling about 3/4 of the tube. Don’t overstuff as the calamari may burst during cooking. Secure the opening with toothpicks.
  3. Cook the Calamari:
    • Heat a large skillet over medium heat and add a tablespoon of olive oil.
    • Place the stuffed calamari in the skillet and sear on all sides until golden brown, about 2-3 minutes per side.
    • Deglaze the pan with white wine, letting it simmer for a few minutes.
    • Add marinara sauce (if using) and cover, letting the calamari cook for another 10-12 minutes until fully cooked and tender.
  4. Serve:
    • Remove toothpicks before serving and garnish with extra parsley and lemon wedges. Serve alongside a fresh salad or over pasta for a complete meal.
