Conchitas

Conchitas, also known as “sopa de conchitas,” is a simple yet heartwarming Mexican dish made with small shell pasta simmered in a tomato-based broth. Often served as a comforting family meal, this soup is light yet flavorful and can be customized with vegetables or meat.

Ingredients:

  • 1 cup small shell pasta (conchitas)
  • 2 ripe tomatoes, chopped
  • 1/4 onion, chopped
  • 2 garlic cloves
  • 4 cups chicken or vegetable broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Optional: diced carrots, peas, or cooked chicken

Instructions:

  1. Blend the Tomato Base:
    • In a blender, combine the tomatoes, onion, and garlic. Blend until smooth. Set aside.
  2. Toast the Pasta:
    • In a medium pot, heat the vegetable oil over medium heat.
    • Add the small shell pasta and stir continuously until it becomes golden brown, about 3-5 minutes. Be careful not to burn it.
  3. Add the Tomato Sauce:
    • Pour the blended tomato sauce into the pot with the pasta. Stir well to combine.
    • Cook for 2-3 minutes until the sauce thickens slightly.
  4. Simmer the Soup:
    • Add the chicken or vegetable broth to the pot. Stir and bring to a boil.
    • Reduce heat to low and simmer for 10-12 minutes or until the pasta is tender.
    • Season with salt and pepper to taste.
  5. Optional Add-ins:
    • If desired, add diced carrots, peas, or shredded chicken to the soup during the simmering process.
  6. Serve:
    • Ladle the conchitas into bowls and enjoy warm. You can garnish with cilantro or a squeeze of lime for added freshness.

This easy conchitas recipe is perfect for a quick lunch or a light dinner. It’s delicious on its own or served alongside tortillas and avocado slices.
