Kolaczki are delightful Polish cookies that are a holiday favorite, filled with sweet fruit preserves and wrapped in a buttery, flaky dough. Traditionally served around Christmas, they bring warmth and joy to family gatherings.
Ingredients:
- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- ½ tsp vanilla extract
- 1 cup fruit preserves (apricot, raspberry, or your favorite)
- Powdered sugar (for dusting)
Instructions:
- Prepare the Dough:
- In a large mixing bowl, combine softened butter and cream cheese. Beat until smooth and creamy.
- Add granulated sugar and vanilla extract, and continue to mix.
- Gradually add the flour, mixing until a soft dough forms.
- Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour (or overnight).
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Roll the Dough:
- On a lightly floured surface, roll out the dough to about 1/8-inch thickness.
- Cut the dough into squares (about 2×2 inches).
- Add the Filling:
- Place about ½ teaspoon of fruit preserves in the center of each square. Be careful not to overfill, as the filling can leak during baking.
- Fold two opposite corners of each square over the filling, overlapping slightly, and press gently to seal.
- Bake:
- Arrange the cookies on the prepared baking sheets, leaving a little space between them.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Cool and Dust:
- Remove from the oven and let the Kolaczki cool on a wire rack.
- Once cooled, dust generously with powdered sugar.
