Homemade Kolaczki

Kolaczki are delightful Polish cookies that are a holiday favorite, filled with sweet fruit preserves and wrapped in a buttery, flaky dough. Traditionally served around Christmas, they bring warmth and joy to family gatherings.

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • ½ tsp vanilla extract
  • 1 cup fruit preserves (apricot, raspberry, or your favorite)
  • Powdered sugar (for dusting)

Instructions:

  1. Prepare the Dough:
    • In a large mixing bowl, combine softened butter and cream cheese. Beat until smooth and creamy.
    • Add granulated sugar and vanilla extract, and continue to mix.
    • Gradually add the flour, mixing until a soft dough forms.
    • Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour (or overnight).
  2. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  3. Roll the Dough:
    • On a lightly floured surface, roll out the dough to about 1/8-inch thickness.
    • Cut the dough into squares (about 2×2 inches).
  4. Add the Filling:
    • Place about ½ teaspoon of fruit preserves in the center of each square. Be careful not to overfill, as the filling can leak during baking.
    • Fold two opposite corners of each square over the filling, overlapping slightly, and press gently to seal.
  5. Bake:
    • Arrange the cookies on the prepared baking sheets, leaving a little space between them.
    • Bake for 12-15 minutes, or until the edges are lightly golden.
  6. Cool and Dust:
    • Remove from the oven and let the Kolaczki cool on a wire rack.
    • Once cooled, dust generously with powdered sugar.
