Homemade Pirim doce

Ingredients:

  • 1 cup rice (ideally, soaked for 4-6 hours)
  • 1 cup grated coconut (fresh is best)
  • 1 ½ cups jaggery (or palm sugar), grated
  • 1 ½ cups coconut milk
  • 1/4 teaspoon salt
  • 1/2 teaspoon cardamom powder
  • Ghee (for greasing)

Instructions:

  1. Prepare the Rice and Coconut Mixture:
    • Drain the soaked rice and grind it with the grated coconut, adding a small amount of coconut milk to form a smooth, thick paste.
  2. Combine the Ingredients:
    • In a large mixing bowl, combine the rice-coconut paste, remaining coconut milk, grated jaggery, salt, and cardamom powder. Stir well until the jaggery dissolves completely.
  3. Cook the Mixture:
    • Pour the mixture into a deep, thick-bottomed pan. Cook on low to medium heat, stirring continuously to prevent sticking, for about 20–25 minutes, or until it thickens and pulls away from the sides of the pan.
  4. Set the Pirim Doce:
    • Grease a tray or plate with ghee and pour the cooked mixture onto it. Smooth the surface with a spatula and allow it to cool completely.
  5. Slice and Serve:
    • Once set, cut the Pirim Doce into desired shapes, like squares or diamonds. Enjoy as a treat or offer during celebrations!
