BEEF ENCHILADAS with extra cheese

Few meals are as comforting as a plate of beef enchiladas. With a richly seasoned beef filling, layers of soft tortillas, and a generous amount of extra cheese, this dish is perfect for a family dinner or any gathering.

Ingredients:

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade)
  • 1 can (10 oz) enchilada sauce (red or green)
  • 1 can (4 oz) diced green chiles (optional)
  • 2 cups shredded Mexican blend cheese (or cheddar)
  • 8-10 flour or corn tortillas
  • 1/2 cup sour cream (optional)
  • 2 tablespoons oil (for tortillas)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional, for garnish)

Instructions:

  1. Prepare the beef filling:
    • In a large skillet, heat a bit of oil over medium heat. Add the diced onion and garlic, sautéing until soft and fragrant (about 3 minutes).
    • Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
    • Stir in the taco seasoning and diced green chiles (if using). Cook for another 2 minutes, ensuring the beef is fully seasoned. Set aside.
  2. Prepare the tortillas:
    • If using corn tortillas, lightly fry each tortilla in a bit of oil for about 10 seconds on each side to soften them. Drain on paper towels. For flour tortillas, you can skip this step or heat them briefly in a dry pan.
  3. Assemble the enchiladas:
    • Preheat the oven to 375°F (190°C).
    • Spread a small amount of enchilada sauce at the bottom of a 9×13 baking dish.
    • Place about 2-3 tablespoons of the beef mixture into each tortilla, add a sprinkle of cheese, and roll them up tightly. Place seam side down in the baking dish.
    • Once all enchiladas are rolled, pour the remaining enchilada sauce evenly over the top.
    • Sprinkle the remaining cheese generously over the enchiladas.
  4. Bake:
    • Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  5. Garnish and serve:
    • Remove from the oven and let the enchiladas rest for 5 minutes before serving.
    • Top with sour cream, fresh cilantro, or extra toppings like diced tomatoes or jalapeños if desired.
