Whether you choose to keep it simple with just cheese or create a hearty meal with meat and veggies, these gorditas are sure to satisfy your cravings.
Ingredients:
- For the Dough:
- 2 cups all-purpose flour
- 1 cup sourdough starter (active and bubbly)
- 1/2 cup warm water
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 tablespoon olive oil (optional)
- For Filling (optional):
- Shredded cheese (cheddar or queso fresco)
- Refried beans
- Cooked and seasoned meat (chicken, beef, or pork)
- Avocado slices
- Salsa
Instructions:
- Prepare the Dough:
- In a large mixing bowl, combine the flour, baking powder, and salt. Mix well.
- Add the sourdough starter and warm water. If using olive oil, add it now.
- Stir until a shaggy dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
- Rest the Dough:
- Cover the dough with a clean kitchen towel and let it rest for about 30 minutes. This will help the gluten relax.
- Shape the Gorditas:
- After resting, divide the dough into equal portions (about 8-10, depending on the desired size).
- Roll each portion into a ball and flatten it to about 1/2-inch thickness. You can use a rolling pin or your hands.
- Cook the Gorditas:
- Heat a cast-iron skillet or non-stick pan over medium heat.
- Cook each gordita for about 4-5 minutes on each side or until golden brown and cooked through. You may need to adjust the heat to prevent burning.
- Serve:
- Once cooked, keep the gorditas warm in a towel while you finish cooking the rest.
- Cut a pocket into each gordita and fill with your choice of cheese, beans, meat, avocado, and salsa.
