Ingredients:
- 1 whole chicken (about 4-5 pounds)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon, halved
- 1 onion, quartered
- Fresh rosemary, thyme, or your favorite herbs
- Salt and pepper to taste
- 1 cup chicken broth or water (for the bottom of the pan)
Instructions:
- Preheat oven to 425°F (220°C).
- Prepare the chicken: Pat the chicken dry with paper towels. Rub the olive oil all over the chicken, both inside and out. Sprinkle generously with salt and pepper.
- Stuff the cavity: Place the garlic, lemon halves, onion, and a few sprigs of rosemary or thyme inside the chicken cavity.
- Tie the legs: Using kitchen twine, tie the legs together to ensure even cooking.
