Ingredients:
- 2 cups cooked chicken (shredded)
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- 4 large flour tortillas
- 1/2 cup diced onions
- 1/2 cup diced bell peppers (optional)
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 2 tablespoons olive oil or butter
- Sour cream, salsa, guacamole (for serving)
Instructions:
- Heat a skillet over medium heat and add 1 tablespoon of olive oil or butter. Sauté onions and bell peppers until soft.
- Add shredded chicken, cumin, and chili powder. Stir well to combine and cook for 3-5 minutes until heated through. Set aside.
- In another pan, heat 1/2 tablespoon of oil over medium heat. Place a tortilla in the pan, and sprinkle half with shredded cheese.
- Add the chicken mixture on top of the cheese, then sprinkle more cheese over the chicken.
- Fold the tortilla in half, pressing gently. Cook for 2-3 minutes on each side until golden brown and the cheese is melted.
- Repeat with the remaining tortillas and filling.
- Slice into wedges and serve with sour cream, salsa, and guacamole.
