Ingredients:
- 8 tomatillos, husked and rinsed
- 3 dried red chiles (such as guajillo or árbol)
- 1 small onion, roughly chopped
- 2 cloves garlic, peeled
- 1 tsp salt
- 1 tbsp fresh lime juice
- 1/4 cup fresh cilantro, chopped (optional)
- 1 cup water (adjust for consistency)
Instructions:
- Prepare the chiles: Remove stems and seeds from the dried chiles. Toast them in a hot, dry skillet for about 1 minute, turning frequently, until they are fragrant but not burnt. Set aside.
