Chili con carne is the ultimate comfort food, rich in flavor and packed with wholesome ingredients. A classic Tex-Mex dish, this hearty stew combines tender ground beef, warming spices, and a mix of beans and tomatoes, creating a robust and satisfying meal.
Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (6 oz) tomato paste
- 2 cups beef broth
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tsp paprika
- 1 tsp oregano
- Salt and pepper to taste
- 1 tsp cayenne pepper (optional for heat)
- 1 tbsp olive oil
Instructions:
- Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sautéing until soft and fragrant (about 5 minutes).
- Add ground beef, breaking it up with a spoon, and cook until browned. Drain excess fat if necessary.
- Stir in the chopped bell peppers and cook for another 5 minutes until they soften.
- Add the chili powder, cumin, paprika, oregano, cayenne pepper, salt, and pepper, stirring well to coat the beef and vegetables with the spices.
- Stir in the tomato paste and diced tomatoes, followed by the beef broth. Bring to a boil, then reduce the heat to low and let the chili simmer uncovered for 30 minutes.
- Add the kidney beans and black beans to the pot, stirring well. Continue to simmer for an additional 10–15 minutes, allowing the flavors to meld together.
- Taste and adjust seasonings if necessary. Serve hot, garnished with sour cream, shredded cheese, or fresh cilantro if desired.
