Mashed Potato Muffins are the perfect way to elevate leftover mashed potatoes into a delicious, savory treat. The combination of sharp cheddar and Parmesan adds a depth of flavor, while the breadcrumbs provide a light crunch.
Ingredients:
- 2 cups mashed potatoes (leftover or freshly made)
- 2 large eggs
- ½ cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- 2 tbsp chopped chives or green onions
- ¼ cup breadcrumbs
- ¼ cup milk (optional, for creamier texture)
- Salt and pepper to taste
- Butter for greasing the muffin tin
Instructions:
- Preheat your oven to 375°F (190°C) and lightly grease a muffin tin with butter.
- In a large bowl, combine the mashed potatoes, eggs, cheddar cheese, Parmesan cheese, chives, and breadcrumbs. Mix well.
- Season the mixture with salt and pepper to taste. If your mashed potatoes are thick, add a little milk to loosen them up.
- Spoon the mashed potato mixture evenly into the muffin cups, filling them to the top.
- Bake for 20-25 minutes, or until the muffins are golden brown and slightly crispy on top.
- Let the muffins cool for a few minutes before gently removing them from the tin.
