2 tsp instant yeast (or active dry yeast)

1½ cups (360ml) warm water (about 105°F / 40°C)

1 tsp sugar or honey (optional, for extra rise)
Instructions

Mix — In a large bowl, whisk together flour, yeast, salt, and sugar (if using).

Add water — Pour in warm water and stir with a wooden spoon until you get a shaggy, sticky dough. No need to knead.

Rest — Cover bowl loosely with plastic wrap or a towel and let sit at room temp for 1 hour until doubled in size.

Shape — Sprinkle flour on your counter, turn out the dough, and gently shape into a round or oblong loaf.

Bake — Place on a parchment-lined baking sheet or in a preheated Dutch oven. Bake at 450°F (230°C) for 25–30 minutes, until golden brown and crusty.

Cool — Let cool for at least 10 minutes before slicing (I know it’s hard to wait).
