Cajun Chicken Alfredo with Broccoli is a delicious and hearty dish that brings together the creamy richness of Alfredo sauce with the bold spices of Cajun seasoning. The tender chicken is perfectly seasoned and cooked to juicy perfection, while the broccoli adds a nice contrast of color and texture.

Ingredients:

  • For the Cajun Chicken:
    • 2 large chicken breasts
    • 2 tbsp Cajun seasoning
    • 1 tbsp olive oil
  • For the Alfredo Sauce:
    • 1 Β½ cups heavy cream
    • 1 cup grated Parmesan cheese
    • 4 cloves garlic, minced
    • 3 tbsp butter
    • Salt and pepper to taste
  • Other Ingredients:
    • 12 oz fettuccine pasta (or your preferred pasta)
    • 2 cups broccoli florets (steamed or blanched)
    • 1 tbsp Cajun seasoning (optional, for extra flavor)
    • Fresh parsley for garnish (optional)

Instructions:

  1. Cook the Chicken:
    • Rub the chicken breasts with Cajun seasoning, ensuring they’re evenly coated.
    • Heat olive oil in a large skillet over medium heat. Add the seasoned chicken and cook for about 5-7 minutes on each side, or until the chicken is cooked through. Once done, remove from the skillet and let rest before slicing into strips.
  2. Cook the Pasta:
    • In a large pot, bring water to a boil. Add a pinch of salt, then cook the fettuccine according to package instructions. Drain and set aside.
  3. Prepare the Alfredo Sauce:
    • In the same skillet, melt the butter over medium heat. Add minced garlic and sautΓ© until fragrant (about 1 minute).
    • Pour in the heavy cream, stirring constantly. Let the sauce simmer gently for 2-3 minutes.
    • Stir in the Parmesan cheese, whisking until it melts and the sauce becomes creamy and smooth. Season with salt, pepper, and extra Cajun seasoning if desired.
  4. Add the Broccoli:
    • Stir in the steamed broccoli florets into the Alfredo sauce, allowing them to be coated in the creamy mixture.
  5. Combine the Pasta and Chicken:
    • Toss the cooked fettuccine in the Alfredo sauce and broccoli mixture until everything is evenly coated.
    • Slice the cooked chicken breasts into strips and lay them on top of the pasta.
  6. Serve:
    • Garnish with fresh parsley, if desired, and enjoy your Cajun Chicken Alfredo with Broccoli.
